Greek Cucumber Salad
Hi Friends!
This is one of my favorite side dishes to bring to a cookout. It's a great healthy alternative to your typical pasta or potato salad and just as delicious.
Chop all your veggies, combine all ingredients in one big bowl, mix together using a rubber spatula and then enjoy!
INGREDIENTS
Serves 6
2 Cucumbers
10-12 Grape Tomatoes chopped in half
1 Block Feta (crumbled)
1/2 chopped Red Onion
2 Tablespoons Olive Oil
2 Tablespoons Red Wine Vinegar
1 teaspoon lemon juice
1 Tablespoon Oregano
Salt and pepper to taste
Optional - 1 can organic chickpeas
